Looking for a delicious cool dessert on a hot summer’s day? Well look no further coz Vanilla & Chocolate Pudding is ready to be served!
Came across this incredibly easy recipe by Home Cooking Adventure and just had to give it a try given how incredibly easy it looked and was! I tried a combination of both the flavours the first time round, but I gotta say, I was a bigger fan of the chocolate pudding as it had a much stronger taste. So the second time round, I made just that and added crushed oreos in between … absolute heaven! It also serves much better in small individual dessert glasses as it can be quite rich … Unless of course you’re sharing your dessert with someone (like I did), in which case a regular sized glass would be fine ….
Have included the recipe for both below, so take your pick and get stirring coz this dessert is highly recommended!
As mentioned, the original recipe belongs to Home Cooking Adventure, but I have tweaked it slightly according to my own taste and re-written in my own way.
Serving: 3 – 4 regular glasses
Ingredients for the Chocolate Pudding:
Whole milk: 2 cups
Semi-sweet chocolate chips: 1/3 cup
Heavy cream: 3 tbsp
Cocoa Powder: 2 tbsp
Rice flour: 1 tbsp
Sugar: 1/2 cup
Corn flour: 2 tbsp
Salt: 1/4 tsp
Vanilla essence: 1/2 tsp
Method for the Chocolate Pudding:
In a saucepan, add and whisk together the cocoa powder, sugar, rice flour, corn flour and salt. Add milk gradually while whisking continuously.
Place the saucepan over medium heat and continue to cook until the pudding thickens slightly. Stir continuously. Add the chocolate chips and heavy cream to the pudding and continue to cook and stir until the chocolate melts completely. Remove from the heat.
Add vanilla essence to the pudding and give it one final stir. Pour into individual glasses and allow to cool to room temperature. Then cover the pudding with cling film and refrigerate until it is ready to serve.
Ingredients for the Vanilla Pudding:
Whole milk: 2 and 2/3 cups
Sugar: 1/3 cup
Corn flour: 1/4 cup
Egg (large): 1
Vanilla essence: 2 tsp
Salt: 1/4 tsp
Method for the Vanilla Pudding:
In a bowl, add and whisk together sugar, corn flour and salt. In another bowl add and whisk together the egg and 2/3 cup of milk until well-combined. Add the egg mixture to the corn flour mixture and give it one final stir. Set aside.
In a saucepan, heat the 2 cups of milk until it comes to a boil. Remove from heat and gradually add the egg mixture to the saucepan while whisking continuously.
Return the saucepan to the heat and continue to cook until the mixture thickens. Remove from the heat, add vanilla essence and give the mixture one final stir.
Pour the mixture into your individual glasses and allow to cool to room temperature. Cover with cling film and refrigerate until it is ready to be served.

Eggs are free food with SW, so I would have to syn the chocolate, cream and sugar. Milk I could probably getaway with using my A option of 350ml. Oh, you temptress you!

You know what is the hardest part? “…allow it to cool to room temperature…refrigerate until it is ready to be served” I am afraid that mine seems ready to be served while still in the stove. Is that allowed?

That is the hardest part for sure …. I just had a few bites to satisfy the craving and then let it cool .. 😁
